CUISINE

Dining at the Lodge is a unique experience. The restaurant's a la carte menu include Mexican Classics, international standbys and a selection of regional cooking - a cuisine so very different from the "traditional" Mexcian fare it might be from another country. Yucatecan cooks are adept at blending herbs and spices into a range of sauces and sassy marinades. Regular menu changes keep things interesting. The kitchen takes its fruits and herbs, and many of the vegetables directly from the garden; it is no wonders the results are so delightful. Regional Yucatecan cooking depends heavily on pork and turkey, rare spices, Mayan cooking techniques, and a love of olives and peas. Breakfast is a buffet of infinite variety; and the hotel bar stocks an endless list of the nation's finest tequilas. Ethnic dance troupes perform during the season, and guitar trios play the music of Yucatan's favorite composers.
